Let Me Eat Cake! (Happy Birthday)


In so many towns, hundreds of miles from here, there are homes that house my loved ones! ⁣

In those homes are rooms that have been filled with countless memories throughout the years. Christmases, Thanksgivings, Weddings, Christenings, Reunions, Showers, Retirements, Funerals & Birthdays. Those rooms have memories that transcend generations. ⁣

Inside each of those memories, I can almost guarantee there has been delicious food and a dessert table. Food unites us. Food nourishes us. Food comforts us. ⁣

On each of those dessert tables, there have been cupcakes, pies, cookies, cobblers and ice cream. There has likely been 10 Layer Chocolate Cake. ⁣

This cake usually sits in a room surrounded by love, laughter & light. Surrounded by the most remarkable individuals I’ve ever had the pleasure of knowing. Surrounded by MY family. ⁣

I love my family. I’m blessed to call them mine. For my birthday, I wanted to be with them. But I couldn’t. (Thanks, Quarantine) So I made myself a birthday cake that would remind me of them. The time I spent baking & creating on my birthday was sublime. ⁣

Thank you so much for all of the birthday wishes! I read every single one of them & I cherish them. Here’s to roaming around the sun for another year! ⁣

Simple Yellow Cake

  • 1 1/2 cups unsalted butter, softened, divided
  • 6 large eggs
  • 2 teaspoons vanilla bean paste
  • 4 1/2 cups flour
  • 2 tablespoons baking powder
  • 2 cups whole milk
  • Cooking spray

“Hot Chocolate” Frosting

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup brown sugar packed
  • 3/4 cup unsweetened cocoa powder sifted
  • 12 oz evaporated milk
  • pinch sea salt.
  • 1 tablespoon vanilla bean paste
